The tortilla forms the basis of most Mexican dishes. It is a round, thin cake of unleavened cornmeal. Enchiladas and tacos are folded or rolled tortillas filled with meat, chicken, or cheese. Enchiladas are usually covered with a sauce. Nearly every Mexican meal is served with beans. Often they are mashed and served as frijoles refritos (refried beans). Rice, too, accompanies most meals, Contrary to popular belief, all Mexican food is not spicy hot. But whether eaten in a restaurant or in a private home, meals are served with side dishes of hot chili sauce or whole chili peppers. Mexican desserts include flan (a custard pudding), and some popular drinks are hot chocolate and a variety of fruit drinks called liquados.
